River crabs with fried vegetables

Ingredients for 6 people: 36 crabs 1.5kg ripe tomatoes 2 large onions 4 green peppers olive oil salt

Preparation
To make the fried vegetables, chop the onion into cubes and add to a casserole with olive oil. Let it cook on a low heat, without browning. Cut the peppers into squares and add them to the onion. After a while, add the chopped, peeled and de-seeded tomato and let everything cook on a very gentle heat for 30 minutes. Check the level of salt. As for the crabs, put them into a frying pan with a little oil until they go a strong red colour. Then, add them to the fried vegetables and let them cook for 10 minutes before serving.
