Thistles with almonds and cured ham

Ingredients
Ingredients for 4 people: 100 g of finely chopped cured ham 60 g of shelled and peeled almonds 4 sticks of thistle The juice of half a lemon Olive oil Salt

Preparation
Wash the thistle stalks in cold water. Peel and trim them and cut them into pieces of about 2 cm. Put them in an earthenware dish, cover with water and cook over a slow flame for approximately half an hour with a pinch of salt and the lemon juice. Meanwhile, lightly fry the cured ham in olive oil and add the almonds, as well as a little water from the thistles.Leave to cook for a few minutes and add to the earthenware dish with the thistlesOnce all the ingredients are in the same pot bring back to the boil.

Serve immediately in the same earthenware dish.
