Artichokes with ham

Ingredients
Ingredients for 4 people: 1 kg of artichokes, 2 thickish slices of ham 1 spring onion 2 cloves of garlic 1 good carrot Oil Salt White wine Lemon

Preparation
Remove the tips, stalk and outer leaves of the artichokes. Rub their hearts with half a lemon and place in boiling water with salt and another squirt of lemon. After 10 minutes, drain. Place 4 spoonfuls of oil in a heavy-bottomed pan and grate the onion and carrot over it, also adding the finely chopped garlic. When all of this has been gently frying for a few minutes, add the diced ham, stir and turn over, then add the artichokes, the salt, half a glass of white wine and half of water.Cook slowly for 15 minutes and serve hot.
